This ice-cream has a unique and delicious flavour, and is also very easy to make.
2 cups cream
3/4 cup sugar
2 teaspoons grated ginger
1 cup prickly-pear juice (from around 3 fruits)
- Remove the skin from the prickly pears (careful about the spines!!), and place in a blender with a little water. Blend to a smooth puree. Pour into a sieve above a bowl, to remove the seeds. You will have to use a spoon to help seperate all the juice.
- Mix all the ingredenients in the blender. Blend well!
- Pour into a container and place in the freezer. Stir time to time as it starts to freeze , for example, exver 1 1/2 hours until it is hard. (This will help the ice-cream become soft). Don’t forget to stir it! Enjoy!
