Banana-Oat Cake (Vegan & Wheat Free)
This is a tasty and healthy recipe using oats, ripe bananas and chia seeds. As it is really very healthy, it can be eaten regularly, not only as a sweet. If you want to make something a little sweeter, you can add some brown sugar, or some dried fruits, such as chopped figs or dates. Thanks to Mahesh from Madeira in Portugal for sending me the recipe!
4 large ripe bananas (or 6 small)
2 chia seeds tablespoons
1/2 cup olive oil
cinnamon to taste (usually 1 tablespoon)
200g oat flakes (the small, softer kind)
1 tea teaspoon of baking powder
oil for greasing
- Cover the chia seeds with water for about 30 minutes, until they become jelly-like.
- In a blender, mix the bananas, chia, olive oil and cinnamon.
- In a seperate bowl, add the oatmeal and baking powder. Add the banana puree to the ground oats and baking powder and mix everything well. Pour the mixture into an oiled baking tray. Bake in a preheates oven at 180 degrees celcius for around 40 minutes. Allow to cool, and sprinkle with cinnamon to serve.
